  老街坊食府“八大碗”

   “八大碗 ”是玉溪本地傳統待客的飲食禮數,也稱“豬八碗”或“酥燒八大碗”等,是玉溪農村最好的宴席,其制作方法主要以炸、蒸、燉、煮、酥,色澤鮮艷多彩,突出地方特色口味。

  玉溪村子里請客,8人為一桌,菜肴8個,一般都會擺上幾十桌,甚至上百桌,菜品都是八大碗,必備菜有高麗肉、千張肉、燉筍子等,大多用華寧出產的土碗盛放,所以“土八碗”的名稱一直沿用至今……

Yuxi flavored dishes—— Laojiefang Restaurant
  Yuxi-flavored dishes, patented duck roasted with green pine needles, cold rice noodle, slightly fried pork, duck feast, duck set, Yuxi Eight Great Bowls.
   “Eight Great Bowls” of Laojiefang Restaurant
  “Eight Great Bowls” is the traditional Yuxi cuisine for entertain guests. It’s also named as “Pig Eight Bowls (Zhu Ba Wan)” or “Su Shao Eight Great Bowls”, which is the best feast in the countryside of Yuxi. Its cooking methods are mainly fried, steamed, stewed, boiled and crisped, with special local flavor tastes.
  In the villages of Yuxi, when entertaining guests, eight persons sit at a table mainly serving with eight dishes, the feast is usually made with dozens of tables, or even more than one hundred tables. The cuisine of “Eight Great Bowls” is served at the feast. And the requisite dishes are Gaoli Pork (deep fried pork fat with sugar), Qianzhang Pork (boiled, fried and steamed sliced pork with preserved vegetable), braised shredded bamboo shoots, etc., these dishes are usually put in the earthenware bowls produced in Huaning (one of the county in Yuxi). So it’s also named as “Tu Ba Wan” (eight earthenware bowls) up until now.
